Memories of Smells

The olfactory sense is the one that triggers the most memories and has the most impact on how things taste.

This class takes its participants back in time to discover the memories that certain foods and ingredients evoke in us. It explains why sommeliers speak in that funny private language of theirs and why one often hears chefs talk about layering flavours.

On a more practical note, the class also introduces students to basic knife skills, stocks and fishmongery, all of which are put into practice during the class.
