Nature is intelligent. Being a strong believer in the fact that nature provides us with what we need at the time. I insist in my cuisine to follow its lead.
As the days get shorter and nights get colder nature offers us the rich and sweet vegetables and fruits of the Autumn, these sugars transform into carbs, preparing us for the winter. Etc
We will explore how the seasons dictate our cuisine. How the colours of each of these create simplistic beauty and how as cooks we can harness these colours and flavours.
